Chicken and Marinade:
– 2 lbs boneless, skinless chicken breasts, sliced
– 1/3 cup orange juice
– 1/3 cup honey
– 3 tbsp coarse Dijon mustard
– 1 tbsp yellow mustard
– 2 tbsp brown sugar
– 3/4 tbsp Cajun seasoning
– 1/4 tsp black pepper
– 1/2 tsp salt
– 1 clove garlic, minced

Vegetables and Garnishes:
– 1 red bell pepper, sliced
– 1 jalapeno pepper, sliced
– 2 green onions, chopped
– Fresh parsley, chopped
– Lime wedges
– Orange slices


Chicken Preparation

  1. Marinate the Chicken:
    – In a large bowl, mix together the orange juice, honey, Dijon mustard, yellow mustard, brown sugar, Cajun seasoning, black pepper, salt, and minced garlic.
    – Add the chicken slices to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Cook the Chicken:
    – Preheat your grill or grill pan over medium-high heat.
    – Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for about 6-8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  3. Prepare the Vegetables:

    – Add the sliced red bell pepper and jalapeno pepper. Sauté until tender but still crisp, about 4-5 minutes.
  4. Assemble the Bowls:
    – Slice the cooked chicken into strips.
    – In serving bowls, layer the sautéed peppers, chicken strips, and chopped green onions.
    – Garnish with fresh parsley, lime wedges, and orange slices.

– Adjust the heat by adding more or less jalapeno, based on your preference.
